Coqui the Chef’s Food Tip
Red and yellow peppers make a delicious snack alone. Try it!
Ingredients
2 small apples
½ medium red onion
½ medium yellow pepper
½ medium red pepper
1 tbsp of cilantro
2 tbsp of raisins or less
2 tbsp of walnuts or less
1 freshly squeezed lime
½ freshly squeezed grapefruit
½ freshly squeezed orange
2 tbsp of olive oil or desired amount
Sea salt and black pepper to taste
Whole wheat tortillas chips
How to
1Dice all the apples, red onion, peppers, chopped cilantro, add raisins, and mix in a medium bowl.
2Squeeze lime, grapefruit, orange juice, then add the olive oil.
3Finally, add the walnuts then mix the ingredients well.
4Add sea salt and black pepper to taste.
