Zenobia Homemade Oatmeal Cookies
Serves 3 dozen
Ingredients:

2 cups of flour

1 cup of butter (2 sticks) room temp, cut up into cubes

2 eggs (room temp)

1 teaspoon of vanilla extract

1 teaspoon of baking powder

1 teaspoon of cinnamon

3 cups of oatmeal
-
1 cup of Craisin
-
1 cup of coconut flakes
Baking instructions:

First, preheat oven to 375 degrees.

Cream butter in mixing bowl. Mix on low

Add vanilla extract
-
Beat eggs one at a time, then add coconut and raisins, mix for 30 seconds

Next, add the flour and baking powder at medium speed. Beat for 45 seconds. Remember to scrape the sides of the mixing bowl.

Drop by the tablespoon or cookie scoop full onto baking sheets or whoopie pie pan for a perfect shape

Bake for 8 minutes at 380 degrees.
