Recipe: Coconut Lime Energy Bites

The star ingredients are coconut and lime


Prep time:  15 minutes



  • 1 medium lime

  • 2 cups of pitted dates

  • 1 cup of toasted coconut flakes

  • ¼ teaspoon of vanilla extract

  • ¼ cup of cooked tri-color quinoa

  • ½ cup of water but you will only need a few teaspoons



  1. Zest and juice one lime.

  2. Place pitted dates, lime, and zest into a food processor. Pulse to break up roughly.

  3. Add the rest of the ingredients plus a little bit of water, not too much.

  4. Continue to process until mixture comes together.

  5. If, after one minute, your mixture still isn’t coming together, add water one teaspoon at a time until it comes together.

  6. Roll mixture into 1″ or smaller balls and place on a plate or baking sheet. (You should get approximately 15 -20 balls)

  7. Refrigerate 10-15 minutes to chill slightly, then transfer to an airtight container or bag and store in the refrigerator.


How to make toasted coconut flakes: use a non-stick frying pan spread half a bag or less of coconut flakes and stir until they turn medium dark brown. (no oil needed)
